Quorn sausage and potato pie

Ingredients, Serves 1

2 Quorn sausages

1 small tin of baked beans

2 medium mushrooms, sliced

½ small onion, chopped

1 large potato, cooked and mashed

Fry Light

1oz grated vegetarian cheese

Chopped chives

Method:

1. Fry the mushrooms and onion in the Fry Light.

2. Boil and mash the potatoes.

3. Cut the sausages into chunky pieces, place in an oven proof dish and cover with the baked beans.

4. Mix the chopped chives into the mashed potato and spread over the sausage and baked bean mixture.

5. Sprinkle cheese over the top of the potato and cook in the oven on gas mark 4/180°c for 20 minutes.

6. To keep warm, rather than place in the oven, put the dish under the grill and cook until the cheese turn golden brown.
